Highly tolerant of cold, mature plants withstand heavy frost and perform reliably through cool conditions. Pods can be eaten fresh like peas or left to mature for dried beans. The dried seeds are excellent in casseroles, boiled for Greek style salads with garlic and olive oil, or used to make hummus. Broad beans are rich in vitamins B and E and also contribute to soil fertility through nitrogen fixation. In warmer areas, pinching out the growing tips after the first flowers appear helps encourage pod set. Plants may benefit from support using stakes and string as they grow.
