The upright bush plants grow to around 1 metre tall and yield heavily with pods that dry naturally on the plant. Black soy beans have a rich, slightly sweeter flavour than yellow soy beans and can be cooked in much the same way as other dried beans. They are excellent in soups, stews, curries, salads and grain bowls, and are also traditionally used in East Asian cuisine.
