The fast-growing annual vines produce remarkable long, pale green fruits that can eventually reach up to 2 m in length when allowed to mature.\u003c\/p\u003e\n\u003cp\u003eFor eating, fruits are harvested very young at approximately 10–20 cm long, while the skin and flesh are still tender. At this stage they can be cooked much like zucchini, with a mild flavour suited to stir-fries, curries, soups and other savoury dishes. As the fruit matures, the outer shell becomes increasingly hard and the flesh is no longer suitable for use as a tender vegetable.\u003c\/p\u003e\n\u003cp\u003eNew Guinea Bean is a vigorous warm-season climber and requires plenty of room and a very strong trellis or other support.
