Long before orange became the dominant colour of cultivated carrots, yellow varieties formed an important part of the crop’s remarkable diversity.\u003c\/p\u003e\n\u003cp\u003eProducing succulent golden-yellow roots to approximately 20 cm long, Solar Yellow has an exceptionally sweet, mild flavour and crisp texture. The roots are excellent eaten fresh, grated into salads or juiced, and particularly good roasted, steamed or glazed. Cooking deepens the golden colour and brings out their natural sweetness.\u003c\/p\u003e\n\u003cp\u003eYellow carrots contain high levels of carotenoid pigments, particularly lutein, giving them both their characteristic colour and nutritional value.
