Plants produce long, dark green outer leaves surrounding a blanched centre, with mature plants reaching around 45 cm tall. The tender hearts are delicious in fresh salads, grilled, braised or baked, while the roots have traditionally been dried and roasted as a coffee substitute.\u003c\/p\u003e\n\u003cp\u003eFirst cultivated in Belgium during the mid-1800s, Witloof Chicory is unique in that the roots can be lifted after the first growing season and forced in darkness to produce the prized creamy-white chicons.
