They later became deeply embedded in the food traditions of the American South, where slow-cooked collard greens remain an important part of regional cuisine.\u003c\/p\u003e\n\u003cp\u003eThe broad leaves are highly nutritious, providing vitamins A, C and K along with folate, calcium and other minerals. Young leaves can be shredded finely for salads and slaws, while mature leaves are excellent steamed, sautéed, braised or slow-cooked.
