Purple Vienna has a mild, sweet brassica flavour, somewhere between cabbage, broccoli stem and turnip, with a satisfying crisp texture when eaten raw.\u003c\/p\u003e\n\u003cp\u003eHarvest the swollen stems while young and tender, ideally around 5–7 cm across. Peel and slice them for salads, grate into slaws, serve as crunchy vegetable sticks or roast, steam and sauté them.
