The slender plants grow to around 40 cm tall and produce delicate blue flowers. The seeds are naturally rich in omega-3 fatty acids, protein, fibre and a range of vitamins and minerals. They can be added whole or ground to cereals, breads, crackers, biscuits and other baked goods, soaked overnight for breakfast dishes, or used as a plant-based egg substitute in baking. Linseed also produces excellent microgreens (but is not recommended for sprouting) and is a valued feed supplement for laying poultry.
