This quality is reflected in its French name Potimarron, combining \u003cem\u003epotiron\u003c\/em\u003e, meaning pumpkin, with \u003cem\u003emarron\u003c\/em\u003e, meaning chestnut. The fine, relatively dry flesh is excellent roasted, mashed or puréed and particularly good in soups, pies, baking and gnocchi.\u003c\/p\u003e\n\u003cp\u003eRed Kuri belongs to the Hubbard group of \u003cem\u003eCucurbita maxima\u003c\/em\u003e and has an interesting international history. Its ancestry is associated with squash introduced to Japan following European contact, where distinctive Japanese selections subsequently developed.
