The leaves remain tender even when mature, with a mild flavour traditionally described as lower in acidity than many older spinach varieties.\u003c\/p\u003e\n\u003cp\u003eDating to around 1866, this historic variety originated around Viroflay, near Versailles in France. Harvest individual outer leaves as required or cut whole plants once they reach the desired size.
