Burdock

Arctium lappa

Biennial to 2m. Large dock-shaped leaves. Cultivated as commercial root vegetable in Japan, with the flavour of Salsify, prefers a deep sandy soil, prepare by aerating deeply. Stalks also eaten. Sow in warmer months 5-10cm apart, harvest autumn, winter and spring, cook like carrots, use in soups and stews, stores well.
