A perennial darling of the permaculture world. Fast growing green leaves make a great windbreak, mulch and stock fodder. Starchy bulbous root is used as a thickener in cooking or sliced and fried like potato. Immature seeds and shoots also edible. Usually grown by root division. Seeds can take months to sprout if not scarified, so rub them against sandpaper, concrete, a metal file to scuff up the hard seed coat. Grows up to 2m in a warm environment.
