(Tragopogon porrifolius)
A delicate, white-fleshed root vegetable with a mild, sweet flavour, often compared to oysters when cooked. Grow much like carrots or parsnips, though salsify can tolerate gentle transplanting if needed. Use the roots fried, roasted, or boiled; new winter shoots can also be eaten and add a pleasant flavour to salads.

Plants withstand light frost when young and heavy frost once mature. Roots store well in cool, humid conditions.
Sow in autumn, or in spring in colder climates.
Allow 110 to 180 days to maturity.
