Hyssopus officinalis

Hyssop is a hardy, evergreen perennial herb that forms neat, bushy plants reaching around 45 cm tall. Throughout summer it produces spikes of vibrant blue flowers that are highly attractive to bees, butterflies and other beneficial insects, making it an excellent addition to herb gardens, vegetable patches and pollinator-friendly landscapes. Its aromatic, mint-like foliage remains attractive year-round.

The young leaves have a warm, slightly bitter flavour and are traditionally used sparingly to season salads, soups, meat dishes, egg dishes and herbal teas. Hyssop has a long history in both culinary and traditional herbal use and is also valued as a companion plant, helping attract beneficial insects while acting as a trap plant for cabbage moths.

Planting / Sowing

Surface sow or cover seed lightly with 2–3 mm of fine seed-raising mix. Keep evenly moist until germination. Transplant seedlings into a sunny position with well-drained soil, spacing plants 30–40 cm apart. Once established, Hyssop is drought tolerant and benefits from light pruning after flowering to maintain a compact, bushy habit.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
