Grown widely across ancient Europe, collards later became a cornerstone of traditional Southern United States cooking, prized for their rich, sturdy leaves and reliability through the cool season. Plants prefer a sunny position, well-drained soil, and a near-neutral pH. Keep them well watered for tender growth, and expect mature plants to tolerate frost with ease, which often improves flavour.

Sow in late summer and autumn for strong winter harvests.
