Brassica oleracea var. gongylodes
Gigante, also known as Super Schmelz, is an extraordinary Swiss Kohl Rabi capable of producing enormous pale green swollen stems weighing several kilograms, with exceptional specimens reaching up to 9 kg. Unlike many kohl rabi varieties, it remains remarkably tender as it grows, resisting the fibrousness and woodiness normally associated with oversized stems.
Despite often being described as a root vegetable, the rounded edible âbulbâ of kohl rabi actually forms from the swollen stem above ground. Beneath its light green skin, Gigante has crisp white flesh with a mild, sweet flavour somewhere between cabbage, broccoli stem and turnip.
Young stems can be harvested from around 5â6 cm across for particularly tender eating, although one of the great advantages of Gigante is its ability to remain tender at much larger sizes. Peel and slice or grate the crisp flesh into salads and slaws, roast it, steam it, add it to soups and stews or cook it much like turnip. The young leaves are also edible and can be cooked like kale or other leafy brassicas.
Kohl rabi is a relatively recent development compared with ancient leafy brassicas, selected specifically for its enlarged edible stem. Gigante takes this characteristic to an extreme while retaining excellent eating quality.
Plants grow best in rich, fertile, well-drained soil with consistent moisture. Steady growth is important for producing the sweetest and most tender stems.

Planting / Sowing
Sow approximately 5â10 mm deep directly into prepared soil or raise in trays for transplanting. Keep consistently moist during germination.
Space plants approximately 30â45 cm apart to allow the unusually large swollen stems room to develop. Plant in full sun in rich, well-drained soil and maintain regular moisture throughout growth.
Harvest young from approximately 5â6 cm across for exceptionally tender stems, or allow plants to continue developing to their impressive mature size. Unlike many kohl rabi varieties, Gigante remains tender and resists becoming woody even when allowed to grow very large.
If saving seed, Gigante can cross-pollinate with other Brassica oleracea crops flowering at the same time, including other kohl rabi, kale, cabbage, broccoli, cauliflower and Brussels sprouts, so adequate isolation is required to maintain the variety true to type.
Maturity: approximately 54â70 days for young stems, with longer required to reach giant sizes.

The purple colouring extends through the stems and leaf stalks, creating a particularly ornamental plant in the vegetable garden, while the interior remains beautifully white, tender and sweet.
