Burdock

Burdock Seeds

(Arctium lappa)
A tall biennial to around 2 m with large, dock-like leaves. Long cultivated in Japan as a commercial root vegetable, burdock produces slender roots with a flavour reminiscent of salsify. It prefers deep, loose, sandy soil and benefits from thorough soil aeration before planting. Young stalks are also edible.

Burdock has a long history in traditional herbal medicine, where the root has been valued for supporting digestion, skin health, and general cleansing. It is commonly used in decoctions, broths, and tonic blends.

Sow in the warmer months, spacing plants 5 to 10 cm apart. Harvest roots in autumn, winter, or early spring. Use as you would carrots in soups, stews, and stir-fries. Roots store well under cool conditions.
