Arctium lappa

A hardy biennial grown for both food and medicine, burdock has been cultivated for centuries across Europe and Asia. Its long, slender taproots are crisp and mildly sweet with an earthy flavour, prized in Japanese cuisine where they are known as gobo. Enjoy them stir-fried, roasted, added to soups or pickled, while the young leaf stalks can also be peeled and cooked like celery. In herbal medicine, burdock root has traditionally been used to support healthy liver function, the lymphatic system and clear, healthy skin. Rich in the prebiotic fibre inulin, it also provides valuable nourishment for beneficial gut bacteria. Burdock is easy to grow in full sun and deep, loose, well-drained soil, where the roots can develop straight and long. Sow direct, as plants dislike root disturbance. Harvest the roots during the first year while they are still tender, before the tall flowering stems appear in the second season. The striking purple thistle-like flowers are attractive to bees and other pollinators before developing the familiar hooked burrs that inspired the invention of Velcro.

Biennial to 2m. Large dock-shaped leaves. Cultivated as commercial root vegetable in Japan, with the flavour of Salsify, prefers a deep sandy soil, prepare by aerating deeply. Stalks also eaten. Sow in warmer months 5-10cm apart, harvest autumn, winter and spring, cook like carrots, use in soups and stews, stores well.
