Brassica oleracea var. capitata

Cuor Di Bue, meaning “Oxheart” in Italian, is a traditional pointed cabbage producing large, tightly formed hearts of tender light green leaves. Heads can reach approximately 2 kg and develop the distinctive tapered shape characteristic of old European Sugarloaf cabbages.

The leaves are sweet, crisp and tender, making Cuor Di Bue particularly good for fresh eating. Finely shred into salads and coleslaw, ferment into sauerkraut or use in soups, stir-fries, braises and other cooked dishes. The tender outer leaves can also be harvested individually while the head continues to develop.

A reliable cool-season variety, Cuor Di Bue performs best in full sun with rich, fertile, well-drained soil and consistent moisture. The pointed heads are relatively compact for their weight, making efficient use of garden space while still producing a substantial harvest.

Planting / Sowing

Sow directly or raise in trays, approximately 5–10 mm deep. Keep consistently moist during germination and establishment.

Transplant or thin seedlings to approximately 40–50 cm apart in full sun and rich, well-drained soil. Maintain regular moisture as heads develop and harvest once the pointed hearts are firm and well formed.

If saving seed, remember that cabbage will cross-pollinate readily with other compatible Brassica oleracea varieties, so adequate isolation is required to maintain the variety true to type.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
