Anethum graveolens

Much like the legendary demi-god, Hercules Dill displays remarkable vigour and productivity. Growing to around 80 cm tall, this robust variety produces an abundance of dark green foliage with a subtle blue tint, allowing for an extended harvest of fresh leaves before flowering. Its bold flavour and rich aroma are retained exceptionally well, even after freezing, making it a favourite for both fresh use and preserving. Widely used to flavour seafood, potatoes, soups, salads, sauces, condiments and pickles, Hercules is also highly attractive to bees and other beneficial insects when in flower.

Planting / Sowing

Direct sow seed 5–10 mm deep into fertile, well-drained soil in a sunny position. Dill develops a taproot and is best sown where it is to grow. Space plants 20–30 cm apart and keep the soil evenly moist during establishment. Harvest leaves regularly to encourage continued production, or allow plants to flower and produce seed for culinary use and to attract beneficial insects.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
