This Italian Pink (Subtropical) garlic is a bold Mediterranean heirloom, shaped by Italy’s sun-drenched landscapes and rich culinary traditions. With its sharp yet sweet flavour, it holds its own in robust dishes - perfect for sautéing in olive oil, enriching pasta sauces, or infusing marinades with an intense garlicky kick. Unlike longer-season garlics, this variety is well-suited to the warm climates of northern NSW and QLD, thriving in short-day conditions with only a 5-6 month growing cycle. Adapted to mild winters and hot springs, it’s a reliable producer in subtropical regions where other varieties may struggle. While technically a softneck, it has a unique habit of forming up to three layers of irregular cloves and an internal scape that occasionally pushes bulbils through the stem, offering a fascinating twist on traditional garlic growth.
