Satureja hortensis

Summer Savory is a fragrant annual herb growing to around 45 cm, producing slender stems covered with aromatic green leaves and small white to pale lilac flowers that attract bees and other beneficial insects. The leaves have a warm, peppery flavour and are widely used fresh or dried to season beans, soups, stuffing, vegetables, meats and salads. A traditional kitchen herb, Summer Savory pairs particularly well with legumes, earning it the nickname "the bean herb."

In traditional Western herbalism, Summer Savory has been used as an aromatic digestive herb. The leaves have traditionally been infused as a tea to support digestion and help relieve occasional digestive discomfort after meals.

Planting / Sowing

Sow seed on the surface or cover lightly with no more than 2–3 mm of fine seed-raising mix, as light aids germination. Keep the soil evenly moist until seedlings emerge. Transplant or thin plants to 20–30 cm apart in a sunny, well-drained position. Harvest leaves regularly before flowering for the best flavour, using them fresh or drying them for later use.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
