Beta vulgaris

White Silver is a classic, reliable silverbeet producing broad, deep green leaves with thick, crisp white stems and prominent white veins. Vigorous and highly productive, it provides generous harvests over a long growing period and is an excellent staple for the home vegetable garden. Both the leaves and stems are edible. Young leaves can be picked for salads, while mature leaves are excellent steamed, sautéed or added to soups, pies, curries and other cooked dishes. The thick white stems can be cooked separately and used much like celery or other leafy vegetable stems. A productive cut-and-come-again crop, White Silver can be harvested progressively by removing the outside leaves and leaving the centre of the plant to continue growing.

Known in the Mediterranean region in ancient times. Sometimes called Spinach or chard. Likes soil pH above 6.0 Sow anytime outside frost, cool weather is preferred for growing, and plants suffer in hot dry times.
