Amaranthus tricolor

Garnet Red is a striking leaf amaranth prized for its intense fuchsia-coloured foliage. Young leaves are harvested as vibrant microgreens with a mild, tender flavour, while more mature leaves make an attractive addition to salads and cooked dishes. As the plants grow, the upper leaf surface turns green while the undersides retain their rich fuchsia tones, making this variety as ornamental as it is edible. Fast growing and heat tolerant, it performs well in garden beds, containers and for repeated cut-and-come-again harvests.

Planting / Sowing

For microgreens, sow seed densely over a shallow tray of quality seed-raising mix, press lightly into the surface and keep evenly moist. Harvest in 7 to 10 days when the first true leaves begin to appear. For baby leaf or mature plants, sow directly into well drained soil in full sun, covering seed lightly. Thin or space plants 20–30 cm apart for leaf production. Baby leaves can be harvested from around 16–25 days, with regular picking encouraging fresh new growth.
