Capsicum annuum

Californian Wonder is a classic heirloom Capsicum and one of the best-known traditional bell pepper varieties. A reliable and heavy producer, plants develop large, blocky fruits with thick, crisp walls and a wonderfully sweet flavour.

Fruits grow to approximately 10 cm and can be harvested green for a fresh, crisp flavour or left on the plant to ripen to a rich glossy red, becoming progressively sweeter as they mature. Fully ripe red Capsicums are particularly rich in vitamin C and carotenoid antioxidants.

An excellent all-purpose variety in the kitchen, Californian Wonder can be eaten fresh in salads, sliced for sandwiches, roasted, grilled, stuffed, sautéed or added to sauces, relishes and preserves. The substantial walls make the fruits particularly good for stuffing and roasting.

Plants thrive in warm conditions with full sun, fertile, well-drained soil and consistent moisture. Capsicums are technically tender perennials and can continue producing for several seasons in warm, frost-free climates, although they are commonly grown as annuals.

Tropics: Most of the year, avoiding extreme heat or wet periods
Subtropics: Late winter to summer
Mild climates: Spring to early summer
Cold climates: Spring after frost, preferably started earlier under protection

Planting / Sowing

Sow approximately 5 mm deep into trays or pots and keep warm during germination. Capsicum seed germinates best with consistent warmth and may be slow to emerge in cool conditions.

Transplant seedlings once the weather and soil have warmed, spacing approximately 40–50 cm apart in full sun and fertile, well-drained soil. Maintain consistent moisture during flowering and fruit development.

Harvest green once fruits have reached full size, or leave them on the plant to ripen completely to red for maximum sweetness and colour.

Maturity: approximately 68–89 days.
