Apium graveolens var. rapaceum

Talar is a European celeriac variety bred for uniform, well-shaped roots with relatively smooth skin and fewer side roots than many older strains. The dense, aromatic flesh has the distinctive earthy, celery-like flavour for which celeriac is prized, while the leafy tops can also be used for flavouring much like celery.

The swollen root can be grated raw into salads and remoulade, roasted, mashed or added to soups, stews and vegetable juices. The leaves are useful in stocks, soups and herb salts. Mature roots also store well under cool conditions, making celeriac a valuable crop for extended use after harvest.

More tolerant of cold than celery, Talar performs best over a long, relatively cool growing season. It prefers deep, humus-rich soil and consistent moisture, which encourage steady growth and smooth, well-developed roots.

Seed count: approximately 2,500 seeds per gram. Approximately 700 seeds per packet.

Planting / Sowing

Sow seed very shallowly onto moist seed-raising mix, pressing gently into the surface and barely covering, as light assists germination. Keep consistently moist during the often slow germination period. Transplant once seedlings are large enough to handle, taking care to keep the crown at soil level.

Space plants approximately 25–30 cm apart with 40–50 cm between rows. Grow in full sun in deep, fertile, humus-rich soil and maintain consistent moisture throughout the long growing season. Harvest once the swollen roots have reached a useful size, usually around 8–12 cm across.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
