Apium graveolens var. rapaceum

White Alabaster is a traditional Celeriac variety producing smooth, rounded roots with pale, creamy-white flesh and an excellent fine flavour. Harvested at approximately 10 cm across, the compact bulbs are tender and aromatic with the distinctive sweet, earthy celery flavour characteristic of Celeriac.

The creamy flesh is delicious grated raw into salads and remoulade, roasted, mashed, baked, puréed or added to soups and stews. The leafy tops are also useful for flavouring stocks, soups, herb salts and other savoury dishes.

More cold tolerant than celery, Celeriac is particularly well suited to temperate climates and develops its best roots through a long, cool growing season. Harvested roots store exceptionally well under cool conditions, making White Alabaster a useful winter storage vegetable.

Plants prefer full sun and deep, humus-rich, fertile soil with consistent moisture. Celeriac is a relatively slow-growing crop and benefits from steady nutrition and watering throughout its approximately 120-day growing period.

Tropics: Autumn to winter in cooler highland areas
Subtropics: Early autumn in cooler locations
Mild climates: Spring and early autumn
Cold climates: Spring after frost, starting seed earlier under protection if required

Planting / Sowing

Sow the very fine seed into trays or punnets, pressing gently onto the surface of moist seed-raising mix and covering only very lightly. Keep consistently moist during the relatively slow germination period.

Transplant seedlings once sturdy, spacing approximately 25–30 cm apart in rich, well-prepared soil. Plant with the crown at soil level rather than burying it deeply, allowing the swollen root to develop above the soil surface.

Maintain consistent moisture throughout growth. Harvest when roots reach approximately 10 cm across. Remove the leafy tops before storing roots under cool conditions.

Maturity: approximately 120 days.
