Apium graveolens var. dulce

Tall Utah is a classic Celery variety producing tall, upright plants with glossy dark green stalks reaching approximately 60 cm. The crisp stems are stringless with an excellent celery flavour, while good disease tolerance makes this a dependable variety for the home vegetable garden.

Both the stalks and leaves are useful in the kitchen. Enjoy the crisp stems fresh in salads and snacks or add them to soups, stews, stir-fries, stocks and sauces. The strongly aromatic leaves make an excellent seasoning and can also be used in stocks, soups and herb salts.

Native to the Mediterranean region, celery has a long history of both food and medicinal use. It was known to the ancient Greeks and Romans and was gradually developed into the fleshy-stemmed vegetable we recognise today through European cultivation. Celery seed also has a long history in Western herbal medicine, particularly as a diuretic and for its traditional use in gout, rheumatic complaints and urinary conditions.

Tall Utah prefers cool growing conditions and requires rich soil, generous feeding and consistent moisture to develop tall, succulent stalks. Celery has a shallow root system, so plants should not be allowed to dry out. Individual outer stems can be harvested as required while leaving the centre to continue growing.

Approximately 400 seeds per packet

When to Plant (Australia)

Tropics: Autumn to winter
Subtropics: Autumn to spring
Mild climates: Spring and autumn
Cold climates: Spring to early summer

Planting / Sowing

Sow the fine seed into trays or punnets, pressing gently onto the surface of moist seed-raising mix and covering only very lightly. Keep consistently moist during germination.

Transplant seedlings once sturdy, spacing approximately 20–30 cm apart in rich, well-manured soil. Keep plants well watered throughout growth and do not allow the shallow root zone to dry out.

For paler, milder stems, blanch by mounding mulch around the stalks or enclosing them with cardboard or another light-excluding material as they approach maturity. Harvest individual outer stalks as required or cut the entire plant at the base.

Maturity: approximately 100–120 days.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
