A hardy summer annual grown for both its nutritious leaves and protein rich grain. Greens are rich in vitamins and minerals, with lower oxalic acid levels than spinach, and can be eaten raw or cooked. Seeds contain over 18 percent protein, higher than corn or wheat, and can be eaten popped. Processed amaranth products are available through Coles, Woolworths supermarkets, and selected health food stores. The cereal can be eaten alone with milk, fruit, and honey, or mixed with other grains.

Planting / Sowing
Sow after frost in full sun. Do not sow deeply, scatter seed on the soil surface and lightly rake in. Keep soil moist until established. Plants grow to around 1 m in height. Harvest leaves as needed or allow plants to mature for grain production. Approximately 95 days to maturity.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
