Origanum syriacum

Za'atar is a fragrant, small woody perennial forming a low, spreading mound around 40 cm high and up to 1–2 metres wide. Its soft, fuzzy, grey-green leaves have a distinctive heart shape and are highly aromatic, making them a prized culinary herb throughout the Middle East. Traditionally blended with sesame seeds and sumac to create the famous za'atar seasoning, the leaves can also be used fresh or dried to flavour breads, meats, vegetables and salads. In summer, the plant produces attractive white flowers that are highly valued by bees and other pollinators. Native to Israel, Jordan and neighbouring regions, Za'atar has been cultivated since ancient times and has a long history of traditional use in Middle Eastern herbal medicine.

Planting / Sowing

Sow seed on the surface of a fine, well-drained seed-raising mix and lightly press into the soil without covering, as light aids germination. Keep moist but not waterlogged until seedlings emerge. Transplant into a sunny position with well-drained soil, spacing plants 40–60 cm apart. Once established, Za'atar is drought tolerant and benefits from regular harvesting to encourage bushy growth.
