Salvia officinalis

Sage is a hardy, evergreen perennial growing to around 45 cm, prized for its soft grey-green aromatic leaves and attractive flowers that are highly valued by bees and other pollinators. A classic culinary herb, sage adds a rich, savoury flavour to roasted vegetables, stuffing, meats, pasta, breads and herb blends. It also makes an excellent companion plant for cabbage and carrots and has traditionally been grown to help deter moths and flies.

In traditional Western herbalism, sage has long been valued as a versatile household herb. The leaves have traditionally been used as a gargle or mouthwash to support oral and throat health, while cooled infusions have been used as a hair rinse. Sage has also been traditionally used to aid digestion and was valued for its astringent and aromatic properties.

Tropics: April to July
Subtropics: March to May and August to October
Mild climates: Spring and autumn
Cold climates: Spring after the last frost

Planting / Sowing

Sow seed 3–5 mm deep in a quality seed-raising mix or directly into well-drained soil in a sunny position after the danger of frost has passed. Keep the soil lightly moist during germination but avoid overwatering. Transplant or thin plants to 30–40 cm apart. Once established, sage is drought tolerant and benefits from regular light pruning to encourage compact, vigorous growth.
