Carum carvi

Caraway is a hardy biennial, sometimes short-lived perennial, growing to around 60 cm tall. Best known for its aromatic, liquorice-flavoured seeds, it has been cultivated for centuries as both a culinary and medicinal herb. The seeds are widely used to flavour breads, cakes, biscuits, cheeses and herbal teas, while the young roots can be cooked and enjoyed much like parsnips. Delicate white flower umbels attract beneficial insects, making Caraway a valuable companion plant, particularly near peas. Rich in naturally occurring minerals including potassium, sodium, calcium, phosphorus and iron, it is an attractive and productive addition to the herb garden. Plants typically flower after around 120 days, with mature seed ready for harvest in the second season, approximately 400 days from sowing.

Planting / Sowing

Direct sow seed 5–10 mm deep into well-drained, fertile soil in full sun to partial shade. Caraway develops a long taproot and is best sown where it is to grow. Keep the soil evenly moist during germination. Space plants 20–30 cm apart with 40–50 cm between rows. Harvest leaves as required in the first year, then allow plants to flower and set seed during the second season.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
