Lactuca sativa

Paris White is a historic French Cos Lettuce producing tall, upright heads of elongated green leaves surrounding a crisp, pale heart. The heads taper towards the base and develop the substantial central ribs and satisfying crunch characteristic of traditional Cos or Romaine lettuces.

This old variety has a fascinating connection to Thomas Jefferson, who grew a lettuce known as Paris White Cos at Monticello after his years in France. His detailed garden records document its cultivation from the 1790s, part of his lifelong enthusiasm for experimenting with vegetables and preserving useful varieties.

The crisp, succulent leaves have a fresh, mild flavour and excellent texture. They are particularly well suited to Caesar salad, where the sturdy leaves hold dressing without quickly wilting, and are equally good in sandwiches, wraps and other fresh dishes.

Lettuce is one of the world’s oldest cultivated salad vegetables, grown for thousands of years and spreading through the ancient Mediterranean world. Cos or Romaine lettuces are distinguished by their elongated upright growth, substantial midribs and crisp leaves.

Paris White prefers fertile, well-drained soil with a near-neutral pH and consistent moisture. Like most lettuces, it performs best in mild conditions, with some afternoon shade beneficial as temperatures increase.

Planting / Sowing

Sow shallowly, approximately 3–5 mm deep, directly into prepared soil or raise in trays for transplanting. Lettuce seed needs only a light covering and germinates best in cool to mild conditions.

Space plants approximately 25–30 cm apart to allow the upright heads to develop fully. Grow in full sun during cooler weather or provide some afternoon shade as temperatures increase.

Keep soil consistently moist to encourage crisp, tender growth and reduce stress that can cause bitterness or premature bolting. Harvest individual outer leaves as required or allow plants to form full upright heads before cutting at the base.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
