Amaranthus tricolor

Garnet Red Amaranth is one of the most striking baby leaf and microgreen varieties available, producing vibrant fuchsia-red stems and leaves that add outstanding colour to salads, sandwiches and garnishes. The young leaves have a mild, sweet and slightly tangy flavour often compared to spinach, making them both attractive and versatile in the kitchen.

Harvested as microgreens from 10–25 days or as baby leaf greens in approximately 3–4 weeks, Garnet Red Amaranth provides a fast and rewarding crop. As the plants mature, the upper leaf surfaces gradually develop green tones while retaining their rich fuchsia colouring underneath, creating a beautiful contrast in salads and mixed leaf harvests.

Amaranth has been cultivated for thousands of years as both a leafy vegetable and grain crop. Young leaves are highly regarded for their tender texture and nutritional value, while the vivid colouring makes this variety especially popular with chefs, market gardeners and home growers.

Planting / Sowing

As well as the usual harvested vegetables, this variety can be grown specifically as Baby Leaf Salad Greens or Microgreens. Harvest baby leaf greens at 8–15 cm tall in approximately 3–4 weeks, or harvest microgreens at 3–8 cm tall from 10–25 days depending on growing conditions.

Best grown in trays, boxes, pots or garden beds using quality potting mix or well-prepared soil. Sow seed evenly and cover with approximately 3 mm of fine friable mix. Maintain consistent moisture and provide good light for strong growth. Ideal growing temperatures are between 16°C and 28°C.

Harvest using scissors, either cutting the entire crop or harvesting individual leaves. Many plants will regrow from stem nodes, allowing for multiple harvests under favourable conditions.
