Amaranthus tricolor

A striking leaf amaranth prized for its intense fuchsia coloured foliage. Young leaves can be harvested as salad greens or microgreens, offering vibrant colour and a mild, tender flavour. As plants mature, the upper leaf surface turns green while the undersides retain their rich fuchsia tones, adding depth and interest to both the garden and the kitchen. Fast growing and heat tolerant, ‘Garnet Red’ is as ornamental as it is edible, making it a standout choice for beds, containers, and cut-and-come-again harvests.

When to Plant (Australia)
Tropics: Early spring onwards
Subtropics: Early spring to summer
Mild climates: Late spring to summer
Cold climates: Late spring after frost risk has passed

Planting / Sowing
Sow directly into well drained soil in full sun once the weather has warmed. Sow seed shallowly and keep soil moist until germination. Thin or space plants 20 to 30 cm apart for leaf harvest, or sow closer for ongoing cut and come again picking. Young leaves can be harvested as microgreens in 7 to 10 days, or as salad greens from around 16 to 25 days.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
