Cichorium intybus

Witloof Chicory, also known as Belgian Endive, is a classic European heirloom grown for its crisp, tightly packed pale hearts and distinctive, mildly tangy flavour. Plants produce long, dark green outer leaves surrounding a blanched centre, with mature plants reaching around 45 cm tall. The tender hearts are delicious in fresh salads, grilled, braised or baked, while the roots have traditionally been dried and roasted as a coffee substitute.

First cultivated in Belgium during the mid-1800s, Witloof Chicory is unique in that the roots can be lifted after the first growing season and forced in darkness to produce the prized creamy-white chicons. It performs best in cool weather, developing sweeter, less bitter hearts as temperatures fall.

Planting / Sowing

Sow seed 5 mm deep into fertile, well-drained soil in a sunny position. Thin seedlings to 20–30 cm apart and keep soil consistently moist throughout the growing season. Harvest young leaves as required or allow plants to mature over 55–150 days. For traditional Belgian endives, lift mature roots in late autumn, trim the foliage and force the roots in darkness to produce blanched hearts.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
