Ipomoea aquatica

Kang Kong, also known as Water Spinach or Entsai, is a fast-growing tropical leafy vegetable prized throughout Asia for its tender shoots, mild flavour and exceptional productivity. This narrow-leaf variety forms a short, sprawling vine and thrives in warm, moist conditions where many other leafy greens struggle.

The young shoots and leaves can be eaten fresh in salads or lightly cooked, while older stems and foliage are best enjoyed stir-fried, steamed or added to soups. With its crisp texture and delicate flavour, Kang Kong is a staple ingredient in many Southeast Asian dishes.

Well suited to hot climates, this vigorous plant flourishes in rich, damp soils and is particularly happy in swampy areas, near ponds or in consistently moist garden beds. Once established, it produces a continuous supply of tender shoots for harvesting throughout the growing season.

When to Plant (Australia)

Tropics: Year round
Subtropics: September to March
Mild climates: October to February
Cold climates: Late spring to summer when temperatures remain above 15°C

Planting / Sowing

Sow seed 10–15 mm deep directly into prepared garden beds or containers once temperatures consistently exceed 15°C. Space plants 20–30 cm apart and keep soil continuously moist.

Grow in full sun in fertile, moisture-retentive soil enriched with compost. Kang Kong thrives in wet conditions and can even be grown in shallow water or boggy areas. Begin harvesting young shoots once plants are well established, cutting regularly to encourage fresh, tender regrowth.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
