Raphanus sativus

True Daikon Radish produces crisp, spicy sprouts with the distinctive peppery heat of fresh radish. Fast growing and highly productive, Daikon is one of the easiest and most rewarding varieties for home sprouting, providing fresh greens in less than a week.

The tender green shoots are naturally rich in vitamins, minerals and plant compounds, including the glucosinolates characteristic of brassica vegetables. Radish sprouts have attracted particular research interest for their naturally occurring glucosinolates and their breakdown products. Their fresh, spicy flavour makes them excellent in salads, sandwiches, wraps and bowls or scattered over soups and savoury dishes.

One tablespoon of seed produces approximately 1½ cups of sprouts under good growing conditions.

How to Sprout

Use a sprouting jar, saucer or purpose-made sprouter. If using a jar, cover the opening with sprouting mesh or another porous material secured firmly in place.

Soak seed overnight, then drain thoroughly. Rinse with fresh water and drain well 2–3 times each day until the sprouts reach the desired size. Good drainage and airflow are important, as sprouts should remain moist but never sit in water.

As the sprouts develop, remove loose seed hulls by rinsing and skimming them from the surface. Once harvested, rinse and drain thoroughly before refrigerating. Store chilled and use within approximately one week.
