Baby Choi is a compact, non-heading Chinese cabbage producing crisp, broad white stems and tender green leaves on plants growing 20–30 cm tall. The mild, slightly pungent flavour makes it ideal for stir-fries, soups, steaming, and fresh salads. Highly productive and slow to bolt, plants can be harvested repeatedly by picking the outer leaves, much like silverbeet, or harvested whole when young. Matures in around 60 days.
