Apium graveolens var. dulce    (Light Green)

Originating from the Mediterranean, used medicinally by ancient Greeks, developed in 16th century in France. The secret to fresh crisp stalks is plenty of manure and water, don't let soil dry out as it has shallow roots. Blanch stalks with mulch or cardboard tubes. Pick individual stems as required. Prefers cool conditions. Stores well at cool temperatures and high humidity. Sow in spring and autumn.

Slender, pale green stems with a strong, unmistakable celery flavour, commonly used in Asian soups and slow-cooked dishes. Very slow growing, with germination often taking up to a month and transplanting best done after 6 to 8 weeks. Cut young for microgreens from around 30 days, harvest stalks around 120 days. Sowing density can be adjusted depending on the intended harvest stage. Also known as Chinese celery.
