Allium cepa

White Sweet Spanish Bunching is a mild, versatile Onion grown primarily for its long white necks and tender green tops. Rather than developing the substantial bulb of a mature Spanish onion, it can be harvested young as a spring onion, with a slender white stem and small bulb at the base.

The crisp stems have a pleasantly sweet, mild onion flavour and can be eaten raw in salads, sandwiches and salsas or finely sliced as a garnish. They are also excellent in stir-fries, noodle and rice dishes, soups and other Asian-style cooking. Both the white stems and green leaves are edible.

Harvesting can begin while plants are young and slender, making this a useful crop for gardeners wanting a relatively quick supply of fresh onions. Plants can also be left longer to develop thicker stems and a more pronounced small bulb.

Onions have been cultivated since ancient times, with their origins generally traced to Central and Southwest Asia. Their ability to store, travel and provide flavour made them an important food crop throughout the ancient world and eventually gave rise to an enormous diversity of bulbing and bunching forms.

White Sweet Spanish Bunching performs particularly well from autumn and spring sowings. Plants prefer full sun and fertile, well-drained soil with consistent moisture for rapid, tender growth.

Planting / Sowing

Sow approximately 5–10 mm deep directly into prepared soil or raise in trays for transplanting. Seeds can be sown approximately 6–8 mm apart and thinned as plants develop.

For slender spring onions, plants can remain relatively closely spaced and be harvested progressively. For larger stems and small bulbs, thin to approximately 5–10 cm apart.

Grow in full sun in rich, well-drained soil and maintain consistent moisture throughout active growth. Avoid waterlogged conditions and excessive fertilising.

Harvest young when the stems reach the desired thickness, or allow plants to develop further for larger white stems and small bulbs. Both the white portion and green tops can be harvested and eaten.

Maturity: approximately 60–120 days, depending on the size at harvest.
