Pastinaca sativa

White Gem is a traditional English heirloom producing medium-length roots with clean white skin, broad rounded shoulders and fine-textured flesh. Renowned for its delicate, sweet flavour, it is an excellent choice for roasting, mashing, soups and stews. This reliable variety develops well in cool conditions and is a rewarding addition to any vegetable garden.

Subtropics: March to August
Mild climates: March to September
Cold climates: Spring to early autumn

Planting / Sowing

Sow seed directly into deeply cultivated, loose, stone-free soil, covering with 10–15 mm of soil. Parsnips dislike transplanting, so sow where they are to grow. Keep the soil consistently moist during germination, which may take 2–4 weeks. Thin seedlings to 10–15 cm apart. Harvest after approximately 120 days once the roots are well developed. The flavour is enhanced by cool weather or light frosts.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
