Brassica oleracea var. sabauda

D'Aubervilliers is a traditional French Savoy Cabbage producing attractive, slightly flattened heads of deeply crinkled blue-green leaves. An old variety associated with the market gardens around Paris, it is valued for its dependable cool-season performance and tender, beautifully textured foliage.

The leaves have a sweet, mild flavour and the characteristic tenderness of Savoy cabbage, making them excellent for braising, steaming, soups and stuffed cabbage dishes. They can also be finely shredded for fresh use or fermented, with the heavily crinkled leaves particularly good at holding dressings and sauces.

A hardy cool-season vegetable, D'Aubervilliers performs best in full sun with rich, fertile, well-drained soil and consistent moisture. Mature plants tolerate cold conditions well, with cooler weather helping develop the sweet flavour for which Savoy cabbages are prized.

Planting / Sowing

Sow directly or raise in trays, approximately 5–10 mm deep. Keep consistently moist during germination and establishment.

Transplant or thin seedlings to approximately 40–50 cm apart in full sun and rich, well-drained soil. Maintain regular moisture as heads develop and harvest once heads are well formed and firm.

If saving seed, remember that Savoy Cabbage will cross-pollinate readily with other compatible Brassica oleracea varieties, so adequate isolation is required to maintain the variety true to type.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
