Brassica oleracea var. sabauda

Vertus is a traditional Savoy Cabbage producing large, slightly flattened heads approximately 20 cm across. The finely crinkled, grey-green leaves form substantial heads with the tender texture and excellent flavour characteristic of Savoy cabbages.

The leaves are mild, sweet and versatile in the kitchen, tender enough to shred finely for salads and slaws while also being excellent steamed, braised, sautéed or added to soups and stews. The flexible, textured leaves are particularly good for cabbage rolls and other stuffed dishes.

A vigorous and reliable cool-season variety, Vertus develops well in full sun with rich, fertile, well-drained soil and consistent moisture. Mature plants tolerate cold conditions well, and cooler weather helps develop the sweetness and tenderness of the leaves.

Tropics: Autumn to winter in cooler locations
Subtropics: Late summer to winter
Mild climates: Late summer to winter and early spring
Cold climates: Spring to summer

Planting / Sowing

Sow directly or raise in trays, approximately 5–10 mm deep. Keep consistently moist during germination and establishment.

Transplant or thin seedlings to approximately 45–60 cm apart in full sun and rich, well-drained soil. Maintain regular moisture while heads develop and harvest once they are well formed and feel firm.

If saving seed, remember that Savoy Cabbage will cross-pollinate readily with other compatible Brassica oleracea varieties, so adequate isolation is required to maintain the variety true to type.

Maturity: approximately 80 days.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
