Pastinaca sativa

Hollow Crown is a classic heirloom parsnip that has been a favourite in Australian gardens for over 150 years. Introduced before 1852, it produces long, smooth, white, tapering roots with fine-textured flesh and an exceptionally sweet, delicate flavour. An excellent choice for roasting, mashing, soups and stews, the flavour improves further after exposure to cold weather. Reliable and easy to grow, Hollow Crown remains one of the most trusted parsnip varieties for home gardeners.

Planting / Sowing

Sow seed directly into deeply cultivated, loose, stone-free soil, covering with 10–15 mm of soil. Parsnips dislike transplanting, so sow where they are to grow. Keep the soil consistently moist during germination, which may take 2–4 weeks. Thin seedlings to 10–15 cm apart. Harvest from approximately 65–135 days, depending on the size desired, with larger roots developing after a longer growing period.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
