Waltham Butternut is a popular heirloom producing pear-shaped fruits up to 22 cm long and around 2 kg in weight. The light orange flesh is dry, smooth and richly flavoured with a sweet, nutty taste, making it excellent for roasting, soups, purées and baking. With a small seed cavity and vigorous vines, this reliable variety performs well across Australia and is an excellent keeper, storing for several months after harvest.

Planting / Sowing
Sow seed 20–30 mm deep into fertile, well-drained soil in full sun after the danger of frost has passed. Space plants 1–1.5 m apart with 2–3 m between rows to allow room for the vigorous vines. Water consistently during flowering and fruit development. Harvest after approximately 83–115 days when the rind is firm and the stem begins to dry. Cure harvested fruit in a warm, airy place for 10–14 days before storing to maximise keeping quality.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
