Daikon is a traditional Asian radish producing long, cylindrical roots with crisp white flesh and a mild, slightly pungent flavour. Best harvested while young and tender, it is delicious eaten fresh in salads, slaws and sandwiches, pickled, or cooked in stir-fries, soups and a wide range of Asian dishes. It is also widely grown as a cover crop, where its vigorous roots help improve soil structure and reduce compaction.
