Satureja montana

Winter Savory is a hardy perennial herb valued for its robust flavour, attractive evergreen foliage and long history as both a culinary and medicinal plant. Growing to approximately 45 cm tall, it forms a compact, bushy shrub covered in small aromatic leaves and masses of delicate white to pale lilac flowers that attract bees and other beneficial insects.

Closely related to Summer Savory (Satureja hortensis), Winter Savory possesses a stronger, more pungent flavour that holds up well in slow-cooked dishes. It is traditionally used to season beans, soups, casseroles, meat dishes, stuffings and roasted vegetables, and has long been regarded as one of the classic herbs of European cooking. The leaves can be used fresh or dried, retaining much of their flavour after harvest.

Traditionally, Winter Savory has also been used in herbal medicine to support digestive comfort and general wellbeing. Its aromatic oils have made it a valued household herb for centuries, while its flowers provide an excellent nectar source for pollinators.

Drought tolerant once established, Winter Savory thrives in sunny positions with well-drained soil and makes an excellent addition to herb gardens, borders and productive landscapes.

Planting / Sowing

Sow seed on the surface of moist seed-raising mix and lightly press into place. Cover only very lightly with fine soil. Keep evenly moist until germination occurs. Transplant seedlings into a sunny position with well-drained soil, spacing plants 30–40 cm apart. Harvest regularly to encourage dense, bushy growth and a continual supply of aromatic leaves.

Due to quarantine restrictions, TAS has an 800g limit per each seed variety and WA has a 10,000 seeds limit per variety.
